Pie Contest

It was a last minute challenge. Our sales team, always competitive and can't resist a contest, especially with each other. Every other day the gauntlet is thrown down in the office by someone in the office and you hear the words "Challenge Accepted". Just as we think the week will end quietly, someone feigned hunger and thus our Pie contest was borne. With only a weekend+ to prep word had to spread quickly.

Monday came and so did the pies, a counter full of delicious pies and fevered calls for taste my pie, vote for my pie, we hadn't really thought through the voting process. Needless to say it was one of our more delicious challenges.

The winner:

Apple Crumb Pie - by Cori Lardy

1 9 inch pie shell

6 cups chopped apples

1 Tablespoon lemon juice

3/4 cup white sugar

2 tablespoons all-purpose flour

1/2 teaspoon ground cinnamon

1/8 teaspoon ground nutmeg

Topping

1/2 cup chopped walnuts

1/2 cup all-purpose flour

1/4 cup cooking oats

1/2 cup packed brown sugar

3 tablespoons butter

Bake in a preheated oven at 375 degrees F

Josh's Fresh Pumpkin Pie

Mind you - Josh used this as a general guideline and changed it as he went.

Pastry for single-crust pie

Filling:

2 cups mashed, cooked pumpking

12 fluid ounces sweetened almond milk

2 eggs beaten

3/4 cup packed brown sugar

1/2 teaspoon ground cinnamon

1/2 teaspoon ground giner

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

Preheat your oven to 400 degrees F

Prepare your crust or use a pre-made crust

Beat your pumpkin with your milk, eggs, sugar, spices and salt with an electric mixer. Pour into your prepared crust, bake 40 minutes or until when a knife is inserted 1 inch from the edge comes out clean.

We loved her peach pie, the crust was fantastic

Oil Pastry:

2 1/2 cups all-purpose flour

1/4 teaspoon salt

1/2 cup cooking oil

1/2 cup cold milk

1 teaspoon baking powder

Mix dry ingredients, add in oil and milk. Mix with fork, form into 2 balls, roll ea out required for your favorite pie.

Mary decided not to be too competitive and make anyone feel bad so she brought in a Costco Pumpkin Pie, you can't go wrong with a costco pumpkin pie.
